How it's going Reader? Back-to-school is here, open house is Thursday, and honestly my brain is one long loading symbol right now. Dinner this week needed to be… well, basically effortless. So I “accidentally” made the easiest one-pan chicken broccoli stir fry of my life. No 12-ingredient sauces, no juggling three pans like I’m auditioning for Food Network, no “wait, did I seriously forget the broccoli”. Just high protein, low carb, and all the classic takeout feels, but somehow easier. We’ve made it twice already this week. My first-grader calls it “chicken trees,” my husband steals half the broccoli before it even hits the table, and I’m pretending that counts as a vegetable win. It’s saucy, savory, fast, and happy food. The kind of recipe you can throw together without thinking and still feel like you crushed dinner, especially when you really just need an easy win this week. This is also perfect for that dream scenario when it comes to one pan meals, the whole “put it together and freeze it for later” situation. My favorite.
