🍳🧀 Cozy Broccoli Cheese Frittata


How it's going Reader?

Okay so it’s not technically cold outside, but I’m declaring it: cozy food is in season.

I don’t care what the weather app says. I lit a candle that smells like warm vanilla woods and made this broccoli cheese frittata, so fall has begun in this house.

And listen… I didn’t mean to make a frittata. I was just trying to use up the rest of the eggs, some sad broccoli, and a little leftover shredded cheese that’s been floating around the fridge since back-to-school started. But somehow it turned into this cheesy, soft, golden-edged, actually-filling miracle that tastes like something you’d get at brunch. If brunch didn’t require shoes or small talk.

The edges get a little crispy, the inside stays fluffy, and you can eat it hot or cold depending on your mood (or level of patience). Bonus: it works for breakfast, lunch, dinner, or my favorite category of meal… “standing in the kitchen with a fork straight out of the pan.”

It’s the kind of cozy that makes you feel like you're doing something nice for your future self. Even if that future self is only 20 minutes away and already tired. Enjoy! 💚
