Keto Pumpkin Bread

How it's going Reader?

Happy October!

Anyone else already planning their holiday baking?

This weekend, we picked out our pumpkin, carved it, roasted the seeds with a little salt and avocado oil, and tested some pumpkin pie recipes. My daughter insisted on saving exactly 20 pumpkin seeds for her garden. Exactly. 20. It's a 6 year old thing, we wouldn't understand, right!?

Anyways, this keto pumpkin bread recipe is super popular, probably because it's suuuper moist, like bakery levels. Made with coconut flour, it's super easy to mix, pour, bake, and enjoy. Check it out and let me know what you think!

Have fun! :)
